不同臭氧濃度對下部煙葉化學(xué)成分和香味物質(zhì)的影響

摘 要:為研究臭氧對煙葉內(nèi)在品質(zhì)的影響,用不同濃度的臭氧對許昌煙區(qū)下部煙葉進(jìn)行處理,檢測了化學(xué)成分和香氣物質(zhì)并進(jìn)行了感官評價(jià)。結(jié)果表明,經(jīng)過不同濃度臭氧處理后,煙葉水溶性總糖和還原糖含量增加,糖堿比升高;煙氣柔細(xì)度提高,雜氣減輕,刺激性降低,勁頭略減小,抽吸品質(zhì)有所改善。經(jīng)過臭氧處理后,煙葉新增19種香味物質(zhì)。硬脂酸、壬醛、癸醛、棕櫚酸、肉豆蔻酸和亞麻酸6種香氣物質(zhì)檢出量隨臭氧濃度升高呈增加趨勢,巨豆三烯酮和苯甲醛則相反。綜合認(rèn)為,經(jīng)臭氧處理后煙葉化學(xué)成分趨于協(xié)調(diào),香味物質(zhì)更加豐富,抽吸品質(zhì)改善。其中以403.859 mg/L臭氧處理效果最佳。

Abstract: To investigate the effect of different concentrations of ozone on the internal quality of tobacco leaves, lower tobacco leaves
were ud as the experimental material and treated by different concentrations of ozone. Sensory evaluation, conventional chemical
components determination and aroma components determination were carried out. The nsory evaluation showed that smoking quality
of tobacco leaves was improved after different ozone concentration treatments. The effect of high ozone concentration (403.86 mg/L)
was the optimal, with better smoothness of smoke, less offensive taste, and moderate strength. After tobacco leaves were treated by
high concentrations of ozone, tobacco aroma components were more abundant, the types and contents of the aroma components were
changed, and 19 kinds of new flavor components were generated, overall aroma effect was good. The contents of acids, alcohols and
aldehydes esters also reached the highest value. The contents of total sugar and reducing sugar in the three groups were higher than
that in the control group. After treated with high concentration of ozone, the contents of water-soluble total sugar, reducing sugar and
sugar/nicotine ratio in the tobacco leaves reached the highest values. Bad on the above-mentioned results, after treated by high
concentration of ozone, the quality of tobacco smoke, the chemical and aroma quality of tobacco leaves were the best among different
treatments.

臭氧(Ozone)很不穩(wěn)定、較活躍,在常溫條件下極易分解,200 ℃時(shí)迅速分解,因此臭氧的氧化性比氧更強(qiáng)[1],臭氧自發(fā)現(xiàn)后,很快應(yīng)用于發(fā)達(dá)國
家食品消毒與儲(chǔ)存[2-7]、水處理[8-10]、醫(yī)療[11-13]等領(lǐng)域,是強(qiáng)氧化劑、消毒劑。曾德琪等[14]研究表明,臭氧處理煙葉能降低焦油、煙堿和總氮含量,同時(shí)
